Key Lime Tarts
- 3 oz. (about 5) egg yolks
- 2 c. sweetened condensed milk
- Zest of 1 lime
- 6 oz. lime juice
- 1 drop green food coloring
- Tart shells
- Whipped cream
Preheat oven to 325 degrees.
In a medium bowl, mix all ingredients until combined. Pour into tart shells and bake for 12 minutes.
Cool and serve with whipped cream.
My inspiration came from a container of spinach in the fridge that needed to be used. I searched my memory bank of recipes and considered my stash. After making several adjustments in the original recipe from Cook's Illustrated, this turned out SO GOOD!
